TAWNY ORANGE CHICKEN

INGREDIENTS

4 Tablespoons Olive oil

3-3 1/2lb chicken cut into 8 pcs

1 clove Garlic finely chopped

1/4 cup fresh orange juice

1/4 cup fresh Lemon juice

1 Teaspoon finely chopped Rosemary

3/4 Teaspoon salt

1/4 Teaspoon Fresh ground black pepper

1 jar 12oz Tiptree "Tawny Orange Marmalade.

1 Granny Smith Apple, peeled, cored,and cut into 1/2" slices

1. Preheat oven to 425 degrees

2. Heat 3 tablespoons of oliver oil in large, non-stick skillet over medium-high heat. Brown half of chicken pieces, skin-side down, then turn to brown the other side. Transfer to 9" x 13" baking pan, skin-side up. Brown remaining pieces in the same way and add to baking pan.

3. Pour off any fat remaining in skillet, leaving brown bits at the bottom. Add remaining tablespoon of olive oil and saute garlic over medium heat, until golden. Add orange juice, lemon juice, rosemary, salt and black pepper. Bring mixture to a boil, while scraping up brown bits at bottom. Add Tiptree "Tawny" Orange Marmalade and bring to a boil, stirring until melted. Spoon orange glaze over chicken and bake, uncovered, 20 mins. Scatter apple slices around chicken and baste chicken an apple with orange glaze. Return chicken to oven for another 15-20 mins, basting one more time, until chicken is golden brown and tender.
